As noted in the first episode, the first novel and chapter 3 of the manga, Luxion is a lost item. That said, what Luxion builds are often lost items as well.
Luxion's ability to control many functions on the ship include using robots to conduct emergency medical operations. This literally includes using super advanced science to save a life.
The automated interior of the ship in many ways acts like a certain spell from AD&D or D&D. The interior robots copy the function of the spell's unseen servants.
The servants inside cook, clean, repair, serve and take care of any possible tasking. This allows a ship that should have crewed hundreds to move on its own.
The guys and girls inside are getting full maid and butler services. The ship can also be your waiter, bartender, chief, and busboy. It can also be your doctor, dentist, tailor, dry cleaner, or mechanic. It is not just limited to those rolls.
If you get drunk, the robots can move you to your bed. In addition, they can: undress you, tuck you in, clean and press your clothes, tailor away any damage if necessary, and treat you if you get sick.
Luxion monitors the sky, with radar and far more sophisticated sensors. For those wondering why Leon can know if something happens at any time within range of the ship, it is because this is one of thousands of the things that the AI is paying attention to at any one time.
As an appropriate space themed metaphor, you can think of the AI's scanners as being like the ones that Spock used for sensors on Star Trek.
The AI also monitors communications. The ships capabilities are far beyond what is used in the modern magical world. As an appropriate space themed metaphor, you can think of what Uhura does from Star Trek.

other functions worth noting from the fan wiki:
Abilities
Being an old human's lost item (a "cheat-level" item), Luxion is highly capable and versatile; in addition, what set it apart from other AI's (both old and new humans') is overall equally-distributed specification because of its main body being a transport spaceship:
Make/build robots to do whatever the master wants, be it construction or farming.
Transmutation, such as converting rock into bars of gold.
Build, repair, and enhance airships with similar capabilities to its main body & armed units by itself.
Cyber/electronic warfare and countermeasure.
Operate network of drones; gather, analyze and act upon intelligence with his tactical datalink.
Utilize optical camouflage as well as countering it.
Send out low-level electric shocks.

LEON TO THE RESCUE! Trapped in a Dating Sim Episode 11
Domosenpai's review:
Olivia begins displaying the powers of the Saint. She is already powerful enough to do so even without the gear of that office.
Outside of the anime, what knocked Angie overboard was the ship was rammed by an enemy ship. The reason the enemy ship rammed the vacation ship in order to cover their Princess from her own nation's cannon fire. The Captain was not trying to destroy the enemy ship, defying his own side with his life and his crews lives to save his Princess.
Olivia's fall was also much more of a nightmare...
LEON BECOMES A HERO! Trapped in a Dating Sim Episode 12 FINALE
Domosenpai's review:
It's worth restating in case it was missed that Luxion undressed and put to bed the Angie and Livia when they were asleep in Leon's room. They didn't willing put themselves in that position. Leon's assessment that he could die if the Duke wished isn't exactly incorrect if caught in a vulnerable position.
A major plot point that would have been in the last episode was skipped in the anime. Leon did something important with all that armor and those ships he took. Keep in mind the invading ships were higher tech and more advanced than the equipment commonly used in the kingdom (likely as they were end event equipment based on a game).
Leon makes a business and forced alliances out of the fact that only he can repair them through Luxion. The kingdom just doesn't have the skills or the technology. In turn, he's forcing people to need him and removing their old equipment to be repurposed.
As often is with contracts, the Big Print Giveth. The small print taketh away.
Angie's meeting with her brother has a lot more context. This includes the Duke watching what Leon is doing with the ships.
Angie's brother is far more of an interference in her life than what you see in the anime. He is keeping a close distrustful eye on Leon.
He warns her about getting too close to Olivia, but is rebutted by Angie. He then says Angie alone is responsible for her commoner friend's protection.
He also shares the fate of the captured enemy Princess. We also learn the fate of Stephanie Olfery so far.
Duke Redgrave's loyalist faction is in the decline. A new faction is quickly amassing an alliance of noble families large enough to overrule the loyalists.
The kingdom may be headed for an unchecked power struggle. Angelica and Leon have powerful enemies in the rising faction.
